Churpi or yak cheese is a product that we make from yak’s milk. Nepal is the primary producer of yak cheese. However, people also consume it in the Himalayan regions as well as countries such as Bhutan, India, Pakistan, and China. Also known as durkha, people use it to make delicious dog chews. Chhurpi is either prepared in a local dairy or at home from buttermilk. To make this incredible cheese, initially, the makers boil the buttermilk and then they separate the leftover solid mass from the liquid. Then they wrap and hang it in a thin cloth to drain out the water. Another amazing fact is that you can eat chhurpi cheese for up to 20 years. The discovery of hard cheese can go back to thousands of years in the remote reaches of the Himalayas.

What is the hardest cheese in the world?

Churpi is the world’s most hardest cheese. One medium size piece of it can last for hours in our mouths. Little by little biting, chewing, gnawing, and slowly dissolving it into a delicious and filling creamy cheese. Chhurpi gradually becomes chewier the longer you gnaw at it.

What does chhurpi taste like?

Soft chhurpi tastes quite similar to natural paneer, but as it gets more harder, it loses more of it’s flavor. Hard chhurpi can take minutes or even hours to soften, but after that it tastes like a dense milky solid with a smoky flavor as it dissolves slowly.
