What is Kachori?

Kachori is a very popular Indian street food and that mainly in Rajasthan. It is made with all purpose flour (maida). You can call kachori a fried puff bread. It can have a large variety of varieties like urad daal kachori, mawa kachori and pyaaz kachori. And the one we will be talking about further is aloo kachori. Many people eat this recipe of kachori as a breakfast with curd in different parts of the country. Whereas many enjoy it as a snack with tea in the evening. Rajasthan of India is the king of kachori. There is a strong belief that kachori was made in the Marwar region many years ago by the Marwaris. Kota Kachori is one of the most famous kachori along with pyaaj kachori (onion kachori) in the state. You can try kachoris in the form of a chaat too. It is a very famous street food in Delhi which people know it as kachori chaat.

Aloo Kachori

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • Potato (boiled) :- 5
  • All purpose flour :- 2 cups
  • Coriander Leaves :- 2 tsp
  • Green Chili (chopped) :- 2
  • Red Chili Powder :- 1 tsp
  • Coriander Powder :- 1 tsp
  • Garam Masala :- 1/2 tsp
  • Amchur Powder :- 1/2 tsp
  • Hing :- 1/4 tsp
  • Cumin Seeds :- 1/2 tsp
  • Salt :- 2 tsp
  • Oil :- for Frying
  • Water :- as required

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. For the dough, take a bowl. Add all purpose flour followed by 1 teaspoon salt and 2 tablespoon oil in it. Mix this mixture well.

  2. Now add some water in it and knead a smooth dough. Apply some oil on it's surface it. Cover it with a cotton cloth (or any) and keep it aside for about 15 minutes. This is going to be our Kachori dough.

  3. For the filling, take a pan and heat 1 tablespoon oil in it. Add hing, cumin seeds and chopped green chili in that.

  4. Now put in some coriander powder and red chili powder Also add amchur powder and boiled mashed potato in it.

  5. Give it a nice mix and saute it for around 2 minutes. After this step, add salt as per your taste and garam masala into it.

  6. Mix it well and add chopped coriander leaves. Give it a nice mix and turn off the flame. Now take off the cloth from the dough you made earlier.

  7. Make a small ball from that dough. Flatten it and make a disk shape. Now, fill the potato stuffing inside it and seal the edges.

  8. Again flatten it and make a thick disk. Now heat some oil and deep fry the kachoris till they get golden brown in color. Remember to change their sides.

  9. Take them out on a clean napkin. Serve the aloo kachori hot with green chutney, tomato sauce and some tea.
