Wash the Cholai and Palak leaves nicely and then chop them evenly. Now, take a vessel and add 2 cups of water for boiling. Then you have to add your chopped Cholai and Palak leaves in the boiling water while stirring it continuously.
Now, add the chopped green chilies, then add the garlic cloves, chopped onion and chopped tomato and mix it well.
Cover the lid of your vessel and cook the mixture for about 10 minutes. After 10 minutes, open the lid and give it a nice mix. Now, let it be cool for almost 10 minutes.
When it gets to the right temperature, add salt and the besan (gram flour) while mixing it. The next thing you are going to do is grind this mixture in a jar.
Now, take a vessel and heat 1 tbs of mustard oil in it. Add chopped onion and ginger garlic paste and saute it till it gets to light brown in colour.
The next step is to add the grinned mixture in your vessel and mix it nicely. Cover the lid and cook it for 5 minutes.
Now, add the garam masala and again give it a nice mix. And for garnishing, add some butter on top of it. Enjoy Cholai Ka Saag with lachha paratha, lassi and some pickle while serving it hot.
