Zucchini Fritters is a very healthy appetizer. It can beautifully work as a side dish, a light meal or a snack too. They are very crispy and are easy to make. It only requires you a handful of ingredients simply available in your kitchen. Moreover, they are low in calories too so you can have them anytime you want. I believe it is a perfect way to let your kids have some veggies which they are gonna ask for more. Trust me they wouldn't even know that it's a courgette vegetable. Zucchini fritters can be made extra crispy by deep frying them. Also they can be extra tasty if you add some Parmesan cheese in them. Here, I haven't added it in this recipe and I have shallow fried them so that they can be more healthy. Zucchini fritters is excellent choice for a family picnic or an evening snack. And yes they are quite healthy. If you serve them to your guests, I'm sure they are going to love it! The fun part is that it is very hard tell that you are actually eating a zucchini. Zucchini Fritters

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • Zucchini : 500 gm
  • All Purpose Flour : 1 cup
  • Onion : 1 chopped
  • Coriander Leaves : chopped
  • Green Chili : 2 chopped
  • Garlic : 1 tsp grated
  • Black Pepper : 1/2 tsp
  • Salt : as per taste
  • Oil : 2 tbs

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. Grate the zucchini evenly in a bowl and add one tablespoon of salt and keep it aside for about 30 minutes.

  2. Now, strain it and squeeze it hardly so that all the water is out of it. Take a bowl and add zucchini, flour, chopped onion and chopped coriander leaves.

  3. Then, add the crushed garlic, chopped green chili, black pepper powder, salt and mix them all well.

  4. Heat oil in a pan and make small balls from the mixture that you made earlier. Flatten it a little (like tikki).

  5. Now, place it on a hot tawa (pan) and apply some oil on upper side of the fritter. Shallow fry till the color becomes golden brown and looks crispy. Zucchini Fritters are ready! Enjoy them with mayonnaise, green chutney or tomato sauce.
