Firstly, take a bowl and add makki atta (maize flour) in it. Then add in the chopped methi (fenugreek leaves), boiled & mashed potatoes and chopped coriander leaves.
Now for the spiciness, add 1 teaspoon Red chili powder. Then add 1/2 a teaspoon of salt, 1/2 teaspoon of Ajwain and 1/4 teaspoon of Hing.
Next, add 1/2 teaspoon of ginger paste and garlic paste. Add 1 teaspoon of Onion paste and 1 tablespoon Oil.
Mix it well and make smooth dough while adding lukewarm water in it. Rest the dough for ten minutes. By the time, heat some oil in a kadhai (frying pan). Knead the dough again. Now, grease your palm with oil and take some portion of the dough. Roll it with your hands & make a flat disk shaped Puri.
Repeat the step and make other puris as well. Deep fry them while turning their sides simultaneously. Take them out when their color gets lovely golden brown. Serve them hot with chutney and tea...
